Bankebiff Stew

  • Ingredients:

  • 2 lbs top round beef
  • 1/4 cup flour, divided
  • Salt and pepper to taste
  • 4 tbsp avocado oil, divided, or oil of your choice
  • 1 large yellow onion, chopped
  • 2 bay leaves
Bankebiff Stew Ingredients

1. Cut the beef into 2-inch slices and allow to come to room temperature.

2. Coat beef slices with half of the flour. Add salt and pepper and sear in Dutch oven until browned. Do this in two batches to not crowd the meat. Use 2 tbsp oil for each batch.

3. Remove meat to a platter. Add onion and cook until tender, adding extra oil if necessary.

4. Return meat to Dutch oven and add bay leaves. Cover with water and simmer for approximately 2 hours, stirring occasionally.

5. Remove the beef to a platter. Put remaining 2 tbsp flour in a jar with a lid, add 1/2 cup cold water, and shake well. Stir enough of the flour mixture into the broth to thicken the gravy slightly.

6. Serve with mashed potatoes, creamed corn, and salad.
