Caesar Salad
- Ingredients:
- 1-1/2 heads romaine
- 3 large strips anchovies
- Juice from 1/2 lemon
- 2 large cloves garlic, minced
- 1 tsp worcestershire sauce
- 2 dashes Crystal hot sauce
- 1 tsp dijon mustard
- 2 tsp red wine vinegar
- 2 coddled egg yolks
- 1/2 cup olive oil
- 1-1/2 cups croutons
- 1 cup grated parmesan cheese
1. Tear romaine into 2 inch pieces and set aside.
2. In a small bowl, make the dressing by mashing anchovies into a paste and adding lemon juice, garlic, Worcestershire sauce, Tabasco sauce, Dijon mustard, vinegar, and yolks of the coddled eggs. Whisk the dressing with a fork while slowly adding olive oil.
3. Add croutons to the romaine lettuce and pour the dressing over the top, sprinkling with parmesan cheese. Toss lightly and serve.
