Knotty Girl Chicken Enchiladas

  • Ingredients:

  • 1 small onion, minced
  • 1 7 oz can diced green chiles
  • 2 10 oz cans cooked chicken
  • 8 oz Monterey jack cheese, divided
  • 10 white corn tortillas (warm each tortilla in microwave for about 15 seconds to soften before rolling
  • 8 oz sour cream
  • 1 large can green enchilada sauce, divided
Chicken Enchilada Ingredients

1. Sauté minced onion and diced green chiles.

2. Combine chicken, about 1/2 cup of the enchilada sauce, and the Monterey jack cheese, reserving a little of the cheese for topping, with sautéd onions and chiles. Roll mixture up in the tortillas and place in a rectangle glass casserole.

3. Spread sour cream over the top of enchiladas and cover with enchilada sauce (you probably won't use the whole can). Sprinkle reserved Monterey jack cheese over the top and bake at 350 degrees for 25 minutes.

4. Let cool for 10 minutes, then serve.
