Chicken 'N Dumplings

  • Ingredients:

  • 1 whole chicken, cleaned
  • 2 stalks celery, cut into 2 inch pieces
  • 1 onion, quartered
  • 2 cloves garlic, halved
  • 1 tsp salt
  • 10 whole peppercorns
  • 2 bay leaves
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 1 onion, chopped
  • 1 clove garlic, minced
  • Salt and pepper to taste

1. Add first seven ingredients to 6 quarts of water. Bring to a boil and simmer uncovered for 1-1/2 to 2 hours. Remove chicken to a platter and allow to cool.

2. Pick all meat from bones and remove skin. Strain water, reserving liquid.

3. Return liquid to pot and add remaining ingredients, except for Bisquick. Simmer for approximately 20 to 30 minutes.

4. Add chicken back to pot. Use Bisquick recipe on box to make dough for dumplings. Spoon dough carefully onto top of chicken and cook uncovered for 10 minutes, and covered for another 10 minutes.
