Gin Fizz

  • Ingredients:

  • 1 6 oz container frozen Minutemaid lime juice
  • 6 oz half and half
  • 6 oz club soda
  • 6 oz gin
  • Vanilla ice cream

1. Combine the first four ingredients in a blender and blend well. Remove half of the mixture and reserve in the refrgerator for the next batch.

2. Add enough ice cream to the mixture so that a thick, but not too thick, drink results. This will probably take a little trial and error. I know it did for me. You don't want it watery, but you certainly don't want it so thick that you can only have one!

3. Don't forget that reserved mixture in the fridge for the next batch. This is great for Christmas morning brunch, together with Eggs Benedict.
