Jambalaya

  • Ingredients:

  • 1 tbsp vegetable oil
  • 1/2 lb andouille sausage, sliced into 1/2-inch pieces
  • 1/2 lb Polish sausage, sliced into 1/2-inch pieces
  • 2 chicken breasts, cut into 1-inch pieces
  • 2 stalks celery, diced
  • 1 onion, diced
  • 1/2 green bell pepper, diced
  • 3 green onions, diced
  • 1/2 bunch parsley, diced
  • 3 cloves garlic, minced
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1/2 tsp Ball's Cajun Seasoning
  • 1-1/2 cups uncooked brown rice
  • 1-1/2 cups chicken stock
  • 1-1/2 cups water

1. Add oil to Dutch oven with cover. Brown sausage and chicken pieces. Add celery, onion, bell pepper, green onions, parsley and garlic and sauté until tender.

2. Add remaining ingredients, cover pan and simmer for 40 minutes, if using brown rice. For white rice, you can reduce cooking time to 25 minutes. Stir occasionally.

3. Check rice for doneness, adding time if necessary, and serve.
