Lima Beans
- Ingredients:
- 1 lb large dried lima beans
- 2 or 3 ham hocks
- 1/3 lb meaty thick-sliced bacon, diced
- 1 onion, chopped
- 1 stalk celery, diced
- 1 carrot, diced
- 2 or 3 garlic cloves, minced
- 1/2 green bell pepper, diced
- 6 tbsp light molasses
- Salt and pepper to taste
1. Soak lima beans in cold water for 8 hours or overnight.
2. Sauté diced bacon, onion, celery, carrot, garlic and green pepper until tender.
3. Drain beans and place in a large pot with 8 cups of water. Add ham hocks, sautéd vegetables and molasses. Bring to a boil, then reduce to a simmer and cook uncovered for 1-1/2 to 2 hours. Test beans after 1-1/2 hours for doneness, cooking longer if necessary. Loosely cover pot during last 1/2 hour. Add salt and pepper to taste.
4. Remove ham hocks and pull meat from bones. Return pulled meat to pot, stir and serve.
