Macaroni Salad

  • Ingredients:

  • 8 oz dry salad macaroni
  • 2 to 3 eggs, hardboiled and chopped
  • 1/2 small carrot, finely grated
  • 4 or 5 medium sweet pickles, chopped
  • 1 thin slice of red onion, minced
  • 1 cup Best Foods or Hellmann's mayonnaise, or to taste
  • 2 tbsp sweet pickle juice

1. Cook macaroni and eggs. Drain and set aside to cool.

2. Add chopped eggs to cooled macaroni.

3. Add grated carrot, chopped sweet pickles and minced red onion.

4. Add mayonnaise and pickle juice and mix well.
