Meatloaf

  • Ingredients:

  • 1-1/4 lb 80% lean ground beef
  • 1/3 lb country sausage
  • 1 small onion, diced
  • 1 carrot, diced
  • 1 stalk celery, diced
  • 1/2 bell pepper, diced
  • 2 mushrooms, diced
  • 2 eggs, beaten
  • 1 cup old fashioned rolled oats
  • 12 oz can tomato sauce (reserve 1/2 for top of loaf)

1. Mix all ingredients except the reserved tomato sauce thoroughly.

2. Form into a loaf and place into a 9x13x2" pan and top with the reserved tomato sauce.

3. Bake at 325 degrees for 1-1/2 hours.

4. Serve with baked potatoes and creamed corn. For the creamed corn, you can mix one can creamed corn with one can drained whole kernel corn.
