Hearty Beef Vegetable Soup
- Ingredients:
- 2-1/2 pounds beef chuck roast (Bone-in)
- 1 Tbsp Vegetable oil
- 8 cups water
- 3 medium stalks celery, cut in 1/2-inch pieces
- 3 medium carrots, cut in 1/2 inch pieces
- 2 medium potatoes, cut in small cubes
- 1 large onion, chopped
- 6 peppercorns
- 1 Tbsp parsley, chopped
- 2 tsp salt
- 2 beef bouillon cubes
- 1 bay leaf
In heavy pot, preheat oil. Brown meat on both sides. Add all ingredients except potatoes. Reduce heat and simmer for 2 hours. Remove meat, peppercorns and bay leaf. Trim meat from bones and cut into 2-inch cubes. Return meat to pot. Add cubed potatoes and continue to simmer until potatoes are done.
