Hearty Beef Vegetable Soup

  • Ingredients:

  • 2-1/2 pounds beef chuck roast (Bone-in)
  • 1 Tbsp Vegetable oil
  • 8 cups water
  • 3 medium stalks celery, cut in 1/2-inch pieces
  • 3 medium carrots, cut in 1/2 inch pieces
  • 2 medium potatoes, cut in small cubes
  • 1 large onion, chopped
  • 6 peppercorns
  • 1 Tbsp parsley, chopped
  • 2 tsp salt
  • 2 beef bouillon cubes
  • 1 bay leaf

In heavy pot, preheat oil. Brown meat on both sides. Add all ingredients except potatoes. Reduce heat and simmer for 2 hours. Remove meat, peppercorns and bay leaf. Trim meat from bones and cut into 2-inch cubes. Return meat to pot. Add cubed potatoes and continue to simmer until potatoes are done.
