Cauliflower au Gratin

  • Ingredients:

  • 6 Tbsp butter or margarine
  • 1 to 2 garlic cloves, minced
  • 4 oz cooked ham, chopped
  • 1 head cauliflower, broken into florets
  • 2 Tbsp all purpose flour
  • 1-1/2 cups whipping cream
  • 1/4 tsp salt
  • Pepper to taste
  • Pinch cayenne
  • 1-1/2 cups (4 to 6 oz) shredded Swiss cheese
  • 2 to 3 Tbsp chopped fresh parsley

Melt butter in a large skillet. Sauté garlic & ham for 2 min. Add cauliflower and cook just until crisp-tender. Combine flour & cream; stir into skillet & blend well. Add salt, pepper and cayenne pepper. Cook and stir until thickened and bubbly; cook and stir 1 minute more. Pour into a 2 qt baking dish. Sprinkle with cheese. Place under a preheated broiler until lightly browned, about 2-4 minutes. Sprinkle with parsley. Serve immediately. 6-8 servings.
