Chicken Cacciatore

  • Ingredients:

  • 4 chicken breasts
  • 2 Tbsp flour
  • 1 Tbsp oil
  • 2 Tbsp chopped onion
  • 1 can (6 oz) unsalted tomato paste
  • 1/2 cup white wine
  • 1/4 tsp white pepper
  • 3/4 cup chicken broth
  • 1/2 bay leaf
  • 1/8 tsp thyme leaves
  • 1/2 tsp basil leaves
  • 1/8 tsp marjoram leaves
  • 1 cup sliced fresh mushrooms

Roll skinned chicken breasts in flour. Sauté in the oil until browned. Remove from skillet. Sauté onions in remaining trace of oil. Add remaining ingredients and stir together. Replace chicken breasts in skillet and spoon sauce over top. Simmer the chicken, covered, for 45 minutes or until tender.

Makes 4 servings.
