- Ingredients:
- 1 lb package dried large lima beans
- 1/2 chopped onion (more if desired)
- 5-6 Tbsp light molasses
- Lean salt pork (1/3 lb more or less)
- Ham Hocks (2 or 3, depending on size)
- Salt & pepper to taste
Soak beans and 1 tsp salt in cold water, overnight. Rinse next morning. Cook in 8 cups of water. Add diced salt pork, molasses, onion. Cook slowly for 1-1/2 - 2 hours, until done. May need to add more water & molasses during cooking.
If using ham hocks, cook hocks first. Remove rind & cut them into small pieces. Then add beans, onion, molasses to ham water. Add more water as needed. Proceed as above.
