Pork Chops w/Mustard Dill Sauce
- Ingredients:
- 6 Pork chops (I prefer the boneless)
- 2 Tbsp unsalted butter
- 3 Tbsp flour
- 1-1/2 cups chicken broth
- 1 tsp freshly snipped dill or 1/3 tsp dried dill
- 1/2 tsp salt, or to taste
- 1/2 tsp white pepper
- 3-4 Tbsp Dijon mustard
- 1 large onion, thinly sliced
- 3/4 cup heavy cream (I have also used milk)
1. Lay pork chops on sheet of waxed paper. Brush 1 side generously with Dijon mustard.
2. Melt butter in large heavy skillet; add chops, mustard side down; cook over med/high heat until lightly browned; brush top side w/mustard, turn chops & brown other side; remove chops from skillet with slotted spatula.
3. Add onions to pan & cook over med-heat until golden brown, about 5 min. (May add 1 Tbsp butter if necessary)
4. Remove skillet from direct heat; add flour, stirring well to combine.
5. Add broth & return to heat, stirring constantly; when boiling add cream.
6. Add dill, salt & pepper; return chops to pan, cover, reduce heat, simmer slowly for 50-60 min. or until tender. Turn once during cooking.
7. Taste for seasonings, adjust to taste and serve chops hot w/sauce poured over top.
