Split Pea Soup

  • Ingredients:

  • 1 pound green or yellow split peas, washed
  • 8 cups cold water
  • Meaty ham bone
  • 3/4 cup chopped onion
  • 3/4 cup diced celery
  • 3/4 cup diced raw carrots
  • 1 large bay leaf
  • 1 teaspoon salt
  • 1 garlic clove, if desired

Combine in heavy kettle with a tight-fitting lid. Bring water to boiling point. Cover. Reduce heat. Simmer for 2 hours, stirring occasionally. Split peas require no soaking. Dry whole peas should be soaked.

Remove ham bone, take off meat. Cut meat in small pieces and add to soup, stirring well. Lift out bay leaf before stirring. Makes 10 servings.
