Swiss Steak, Pizza Style

  • Ingredients:

  • 1-1/2 lbs top round steak 1 inch thick
  • 2 Tbsp flour
  • 1 tsp garlic powder
  • 1/8 tsp pepper
  • 1/2 tsp oregano
  • 2 Tbsp oil or drippings
  • 1 onion, sliced
  • 1/2 cup red wine
  • 1 (1-lb) can stewed tomatoes
  • 1 (4-oz) can sliced or button mushrooms
  • 2 Tbsp chopped parsley
  • 4 Jack or cheddar cheese wedges

Trim any excess fat from meat. Mix flour, garlic powder, pepper and oregano together. Pound seasoned flour into meat. Cut steak into 4 servings. Brown slowly and well on both sides in heated fat using a heavy skillet or Dutch oven. Add onions during the last 5 minutes of browning; cook until softened. Add wine and tomatoes. Cover and cook slowly until meat is almost fork-tender, about 1-1/2 hours, or bake in a moderate oven (350 degrees). Add undrained mushrooms and parsley; cook 10 or 15 minutes longer. Skim any fat from gravy before serving. Gravy may be thickened slightly if desired. Add a little more salt, if necessary. Top meat on serving dish with cheese.
