Tamale Pie

  • Ingredients:

  • 1 12 oz package large noodles
  • 1 large onion, chopped
  • 1 large bell pepper, chopped
  • 1 large clove garlic, minced
  • 3 cans tamales, cut up, with juice
  • 2 cans creamed corn
  • 1 can Mexican stewed tomatoes, cut up, with juice
  • 1 can pitted black olives, halved
  • 1 8 oz can tomato sauce
  • 5 tsp chili powder
  • 2 dashes Crystal hot sauce
  • 1 7 oz can diced green chilis
  • Salt & pepper to taste

1. Cook noodles per package instructions, drain.

2. Sauté onion, bell pepper and garlic in bacon fat (or oil of choice). Add tamales.

3. Add corn and tomatoes to cooked and drained noodles.

4. Combine everything together into a 9x13" pan and bake at 325 degrees for approximately 30 to 40 minutes, turning once during baking.
